Sustainable mushrooms grown in the heart of East London

A quick look back at when the @wearefooditude chefs dropped by our New Spitalfields farm. 🍄 What are we and what do we do? East London Mushroom Collective grows gourmet mushrooms in the heart of New Spitalfields Market, using by-products from the local food system. We’re all about making urban farming more local, sustainable, and straightforward. 🍄 Our mushrooms are grown using upcycled ingredients and harvested just minutes away from the kitchens we serve. No long supply chains, no waste — just fresh, top-quality produce, grown the right way. 🌱 Why do we do it? Mushrooms are healthy, versatile, and a great option for low-impact farming. But more importantly, they’re part of how we’re changing the way cities grow food. We believe in circular systems, low food miles, and being transparent from spore to plate. We're starting our second production cycle on Friday, so we're looking back at some of the photos and video from our December pilot run for learnings and inspiration. What will be different this time? ⚖️ Our test batch filled less than half of one container. We're ramping up to three full containers this time. 🌾 To check our machinery and prcoesses, we used "bought-in" substrates for our pilot. This time we're using 50% upcycled agricultural by-products from @duchessfarms and @gilchesters. 🪮 @mikeh852 promised to comb his hair before taking another after-work selfie.

A quick introduction to our site 🏭 We run our farm out of six 20-foot shipping containers set up inside the grounds of @newspitalfieldsmarket We use two standard containers for preparation and lab work, and the other four are climate-controlled containers (aka "reefers") used for growing 🍄 We took delivery of the containers and production equipment in the summer of 2024 and then spent the next few months installing machinery, doing electrical and plumbing work, and getting everything ready for the fun part: growing mushrooms for our customers!

Hi everyone! With our first harvest well underway, we thought now would be a good time to activate our Instagram account and introduce ourselves 👋 The seed for the East London Mushroom Collective was planted in March 2023, when the @angrymonkuk team did a mushroom growing workshop at @fatfoxmushrooms 🍄 After a summer experimenting with growing mushrooms on waste materials, we successfully submitted a proposal for a container-based urban mushroom farm at @newspitalfieldsmarket, in partnership with Fat Fox and @zherolondon 🤝 We set up the site in the second half of 2024, and we're just closing out our first grow cycle and harvest of blue oysters. We're excited to share our journey as we grow and supply fresh, delicious, sustainable mushrooms to our chef, restaurant, and catering clients!
